How much whipped cream do you need for a cake — a diameter guide

The question "how much do I need" depends on three things: the cake’s diameter, whether you’re only decorating or also filling between layers, and how thick a layer you want. The table below is a rough estimate for a standard, evenly covered cake — for a rustic or "naked cake" style, plan for up to 30% less.
Rough amounts by diameter
Diameter 18-20 cm: about 400-500 ml of whipped cream for decorating, plus roughly the same again if you’re also filling between layers.
Diameter 22-24 cm: about 600-700 ml for decorating, plus extra for filling.
Diameter 26-28 cm: about 800-900 ml for decorating, plus extra for filling.
30 cm and larger (wedding, multi-tier cakes): calculate each tier separately using that tier’s own diameter, then add them up — and always make 10-15% more than the table shows, for touch-ups during decorating.
From powder to finished cream
Whipped cream has a greater volume than the liquid it’s made from — typically around 1.5 to 2 times. When working out how much powder to buy, start from the finished volume of cream you need and work backward using the ratio stated on your product’s packaging.
